Mouth Watering Wednesday: CAKE!!

Chocolate Cocoa Earthquake


You will need:

Box cake mix (yellow or white)
Instant chocolate pudding mix
1 teaspoon Vanilla
1 teaspoon Cocoa
1 cup Sour Cream
3/4 cup vegetable oil
4 Eggs
3/4 cup milk
1 1/2 cups chocolate chips
Frosting (you can make your own)


Preheat oven to 325 F. Mix together ALL ingredients except chocolate chips and frosting. Simple enough, right? :)


Add chocolate chips, and pour into greased 13x8 cake pan.


I baked my cake for 45 minutes. Because of differences in ovens, altitude, etc., I suggest starting at 35 minutes and checking your cake every 5 minutes or so. Insert a toothpick into the cake, and if it comes out clean it is done. Keep in mind that there are chocolate chips in the cake, so if your toothpick touches one it will not be clean. Just try again. :)


Let cool and then frost.

Side note: This cake tastes GREAT when cold. I don't usually like cold cake but this one is SO good after sitting in the fridge for a few hours. I also think these would taste AMAZING as cupcakes. Try it and let me know how you like it!
