Meatless Monday, transformed

While Meatless Mondays have been fun, I'm getting bored with meatless dishes -- like I said, I'm picky. :) So, this is the last week I will be doing Meatless Monday. Starting next week, it will be Menu Plan Monday again.

But for today, it's still Meatless Monday. :) We are going to make tempura green beans.

Meatless Monday

You will need:

oil for frying
1 1/4 cup flour
1/4 tsp baking powder
1/4 tsp baking soda
1 cup club soda
1/2 cup soy sauce (for dipping)

Mix together everything except for the soy sauce. Add green beans. Toss around with tons to ensure complete coverage.


You can cook these in a wok, a frying pan, or a deep fryer. Heat oil to 375. Fry 3 or 4 green beans at a time for about a minute. Drain on paper towels and use soy sauce for dipping.


This was my first attempt at making them so they weren't very pretty, but they tasted sooo good! You can use this batter with other veggies as well, like squash or asparagus.

hmm i have everything but the club soda, would it hurt to make without it?

I'm not sure what you could use instead of the club soda. It would just be powder (instead of batter) if you didn't use that. Hmm. Good question! Let me know how it turns out LOL.

I tried it with regular water, and it worked wonderful!!! I also added pepper and garlic powder to the batter, and it was soo yummy my kids loved it...thank you for the amazing recipe!
